Today I love….Cheats Mini lemon meringue pies

I saw these at a market on the weekend and the seller wanted $3 each for them! No way…..

So I am now determined to make my own and let me tell you that Mr Big is extremely happy about this!!!

INGREDIENTS

24 mini pre-made sweet pastry cases
280g jar lemon butter
2 egg whites
½ cup caster sugar
METHOD
Preheat oven 200°C (180°C fan-forced).

Place egg whites in a medium bowl, beat with an electric mixer until soft peaks form; gradually add sugar, beating until dissolved between additions. Spoon meringue into a piping bag with a 1cm nozzle.

Place pastry cases onto a baking tray and using a teaspoon fill each one with lemon butter. Pipe meringue onto each case in a swirl.

Bake in the oven for 10 minutes or until golden brown.

Makes 24.
