Today I love….Free Rice

Well, well, well…..we finally seem to have a worthy “click” charity here….most of the ones I’ve found seem to be run by the dodgy brothers…..anyhoo…..

Some of you may or may not believe this – but my Mother found this one!

Yay Mum! What a legend she is….on the same bandwagon as her daughter….finding super cool stuff on the interweb…..

So…..how do we get the Free Rice!!??? No, it’s not free for you ya big douche! All you will get is (hopefully) a bigger brain….I bet you are sitting there in front of a computer in a nice warm place, at an actual D.E.S.K with fresh running tap water nearby I am sure…. this is for the United Nations World Food Program

Today I love….Banana Muffins

These are so damn easy you could even make them in the morning!

(if you are more organised than me!)

A nice treat for Mother’s Day and they take less than five minutes to mix and only twenty-five to bake, so piping hot, fresh muffins are ready in under 30 minutes!

Banana Muffins

Ingredients:
2 cups self-raising flour
2-3 over-ripe bananas, mashed
2 eggs
1 cup sugar
1 cup chopped walnuts

Method:
Pre-heat oven to 175 degrees Celsius. Combine all ingredients, beating with a fork until just mixed. Pour into greased and floured or paper lined muffin tins. Bake for 20-25 minutes or until an inserted toothpick comes out clean. Cool before icing with lemon icing or cream cheese frosting if desired.

Today I love….Mother’s Day Margarita Mousse

Margarita Mousse

Preparation time: 20 mins
Serves: 6

This mexican treat is a wonderful dessert for the whole family.

Ingredients

  • 100g white cooking chocolate, chopped
  • 1 tblsp tequila
  • 1 tblsp orange-flavoured liqueur
  • 1 / 4 tsp finely grated lime rind
  • 2 eggs, separated
  • 2 tblsps caster sugar
  • 2 / 3 cup thickened cream

Lime Jelly:

  • 1 / 4 cup lime juice
  • 3 / 4 cup warm water
  • 1 tblsp caster sugar
  • 3 tsps gelatine
  • Extra 1 / 4 cup water

Method

1. Combine chocolate, tequila and orange liqueur in a medium heatproof bowl. Sit bowl over a saucepan of simmering water and stir until smooth. Remove from heat. Cool for 5 minutes. Stir in rind and egg yolks.

2. Beat egg whites in a small clean bowl with an electric mixer until soft peaks form. Gradually add sugar, beating until sugar is dissolved. Fold egg white mixture into chocolate mixture.

3. Beat cream in a small bowl with an electric mixer until soft peaks form. Fold cream into chocolate mixture.

4. Divide mixture among six glasses (3 / 4 cup capacity). Refrigerate overnight.

5. To make lime jelly, combine lime juice, water and sugar in a small bowl. Stir until caster sugar is dissolved. Sprinkle gelatine over extra water in a small heatproof jug. Stand jug in a pan of simmering water. Stir over heat until dissolved. Stir into lime mixture. Strain jelly into a 19cm x 30cm lamington pan. Refrigerate overnight or until set.

6. To serve, coarsely chop lime jelly. Spoon onto mousse.

Mum as she so rightly deserves but also (hopefully) get a present from her!

I NEED her strawberry mallow mouse recipe which she used to make for me

OH so many years ago!
